Garlic Shrimp
These shrimp are a good side dish for the rijsttafel. Indonesian name is: Udang Masak Merah. Shrimp are very popular in Indonesian food and used in lots of rice dishes.
Ingredients galore:
- 2 lbs fresh prawns
- 2 tea sp salt
- 1/2 tea sp pepper
- 2 tea sp cornstarch
- 1-1/2 cup sunflower oil
- 10 dried chillies or use sambal oelek
- 12 shallots
- 8 cloves garlic
- 2 tea sp laos
- 1 tea sp trassie (hold your nose)
- 4 fresh tomatoes, cut in pieces
Drowning the Oedang
Unpack the prawns and clean them. Cut of the ends of feelers and legs so they can't get away
on you. Marinate them with salt, pepper and cornstarch for 25 minutes.
Use a wok and heat the oil. Place the dried chillies (or sambal), shallots, garlic (crushed), laos and trassie in the wok and fry on low heat untill the flavours come free. Now add the shrimp and increase the heat at the same time (close your ears). Stir fry the prawns and add the tomatoes. Add salt and pepper to taste and remove prawns from wok when they are bright red. Eat as appetizer or with the ricetable.
